build: drop the daemon JVM vendor pin

updateDaemonJvm captured JETBRAINS from the JDK that happened to be running
locally. The vendor is not an input to the artifact: building :app:bundleRelease
on Corretto 21.0.11 and on JBR 21.0.11, with the flags from
tools/reproducible-builds/build-release.sh, produced the same AAB
(b33cbb5b464405f868ee8ea03cb656340cb3ae3b1933a14f8c97c69298ec3eb4) and the same
1600 compiler output class files. jvmToolchain(21) with jvmTarget JVM_11 fixes
the class file contract and R8 already runs deterministic and single threaded.

Pinning a vendor does cost something. The release image ships digest-pinned
Temurin 21.0.11, which does not satisfy JETBRAINS, so every fresh container
build would fetch a second JDK over the network. toolchainVersion=21 on its own
is satisfied by the JDK already in the image, and by whatever 21 a contributor
already has. The regenerated fallback URLs resolve to Temurin, so anyone who
does have to provision gets the distribution the docs name.
